Bit of a weird one this.
The idling speed of the Astra seems to be set a bit slo to kick in.
To give a scenario, slowing for a roundabout, clutch in, braking, the revs drop from wherever they were at cruise - 300rpm for example - to 400rpm and then jump back up to idle at around 750-800. But, of course, if I am turning in, the power steering is then engaged, and the car is liable to stall. I have to be really careful not to stall it.
Any ideas?

Depends which model of Astra.
Mk3 (92-98) used an idle air control valve.
Mk4 (98-04) uses a throttle valve stepper motor.

Either way,clean the throttle disc and venturi, unblock the small breather pipe which has caused the problem (inside the throttle body) and if you have an idle speed control valve take it off, wash out with carb cleaner, split the motor from the valve and wash out the nose of the motor then lubricate with a spray type white grease. Occasionally we find that some 'expert' has opened the throttle stop (factory set) to stop it stalling so that will need to be reset, there is usually enough of a witness to see where it originally was.
