Are there any drawbacks to using winter tyres?
I am considering buying a spare set of wheels fitted with winter tyres. Would there be drawbacks if also used in summer or on long-distance motorway journeys in mild, dry weather in winter?

Depends on the tyres. Some of them are okay for year round use; some aren't. Vredestein Quadrac, Goodyear Vector 4 Seasons are both OK for all year round use.
