Have just put a set of Pirelli P 7's on my Forester. For how many miles should I drive "gently" to settle them in?

Dont drive gently, just drive normally.

My own experience is that it takes about 100 to 200 miles on normal car tyres before the releasing agent is scrubbed off and full grip arrives, it took 2000 miles on our pick up.
If i have new drive axle tyres on my truck, it takes about 5000 miles before it stops feeling like a plate of spaghetti to drive..;)

EDIT, strangely enough the winter tyres didn't suffer with this problem on the pick up, i wonder if the treads are chemically cleaned before despatch or is there some other reason.

I don't think you'll hurt the new tyres, but the real point is, you won't have the same amount of grip they'll give a few hundred miles on. So avoid situations where grip is needed ie hurtling round corners and 'playing' with other traffic.

Also allow the tyres to adhere themselves to the rims properly before performing F1 style launches from the lights. Failure to do so can affect the wheel balancing as the wheels / tyres won't necessarily be in the same alignment anymore.
