What sort of noise do these make - and if they start to kick in on a long journey do you go off down the motorway making a great screeching sound? Would this also score the discs?

depends if they are plastic and push into the pad they will just wear down putting a light on, on the dash if they are metal and are part of the pad they will make a grinding noise which will eventually damage the disc you need to find out what type of pad your vehicle has fitted for this you should contact your main dealer(usually push in connector are more common) hope this has helped!!!!!!!!!!

Those attached to pad ie metal strip welded to pad will only make a noise when in contact with disc,thats assuming caliper is working correctly..but pads do move in caliper so possibly will make a screetching noise when contacting for a small amount of time and dissapear.
good idea to get them checked ASAP

They sound like a tuning fork, intermittent at first, continuous later.
Vauxhall use audible warning on the rear pads of Astra and Zafira, I believe they're also used on the front pads if "Check Control" ISN'T fitted - check control detects front pad wear electrically.

Sort of on topic - SWMBO's Zafira has check control, but I can't see any wiring coming form the front brake pads - would this have been fitted on a 2000 Elegance?

Check Control includes front brake pad wear sensing on 2000 Vauxhalls HOWEVER on replacing brake pads, the wire has to be purchased separately - many owners and/or mechanics don't bother and just tape the old cable up to the suspension strut.
