Golf GT TDi 115 PD 2001 - Overheating - mark95

Have recentley bought this car, full service history lots of work done to it.

It's fine on little runs, but the moment you're on the open road the temp soars and the coolant is gone.

It had a new rad, water pump in January. today it had the coolant sensor replaced and a new expansion tank, and still it overheats where do i go next?
