This may have been solved by 2000 but look at my experience on a 1996 Mk4

Im afraid I also forgot to mention that the water is coming from the plastic housing behind the centre console.
When you turn hard right (for example a roundabout) you can see the water leaking from the plastic housing into the front righthand corner of the passenger footwell.
Also, we haven't had any wet weather for a long time & the car hasn't been washed. The problem has occurred since my better half has been using her air con a lot more (so im guessing condensation)
I take it the wing sealing issue is a different problem?

As you say its the water that needs to drain from the air con system. It drains from the bottom of the heater box through a small pipe that goes through the floorpan. This can become kinked or blocked so does not allow the water to drain out. The bottom of the heater fills up and the water comes into the footwell.

superb, thanks for confirming. Is there an easy way to get to the drain pipe? It looks like I need to take the centre console out in order to take the bottom of the heater box to bits? (or can I get to it from under the car?)
I have an air line so im assuming thats going to be the easiest way to clear it if its blocked?
