I have removed the CAR300 stereo from my Corsa, as the battery went dead and it went into SAFE mode. I thought I knew the code, had 3 attempts, then left it. I put the stereo back in but now it won't allow me to enter any codes. Just stuck on 7 SAFE. Is this normal, do I need to do something else?

7 SAFE means you have 7 attempts left. The waiting time between the first two attempts is only 10 seconds, BUT after the third attempt it's 10 mins, with each further unsuccessful attempt the time is doubled, reaching 640 minutes by the 9th attempt.
As it's showing 7SAFE, you'll have to wait 10 mins to attempt to enter the code again. Note that you'll have to leave the stereo and ignition switched on during the waiting time. Switching off either will result in having to wait for the full amount of minutes again.
It is recommended that after the 6th failed attempt to have the stereo put back into operation by an audio specialist. 10 failed attempts blocks the stereo totally and is then only useful as landfill.

"and is then only useful as landfill." .... or hopefully properly recycled in the electronic recycling section of the local council recycling facility.
Does leaving the ignition on for 640 minutes cook the coil like in the good old days?

Well, actually, in the manual it says to return it to Vauxhall, who will exchange it for another unit as long as you cross their palm with silver.

No idea. Best solution is to either remove from the dash and connect up to an alternate power source, or go for a long drive - or a very very long drive if you've managed to get to the 640 min (10.66 hrs) stage.

No, it doesn't. This used to happen in the old days because engines usually stopped with the points shut. Electronic systems tend to keep the current through the coil switched off with the engine stationary, i.e., the electronic equivalent of points defaulting to being open when the engine isn't turning.
