We've just bought a new Scenic and my wife has transfered her insurance to it, this now leaves her old car in our garage with no insurance on it (we've sold it but the buyers paying in installments).

In short no. The car still has to be insured by the owner for your insurance to be valid.

Phone your insurance company up and ask (but I doubt it). They're all different.
But many say "over 25 and not owned by self or spouse".

There is no absolute answer to that question. It varies from insurer to insurer. You need to speak to your insurance company to ascertain their policy on this.
Now here's something rather more pressing. The old car is not currently insured. Unlikely as this may sound, let us suggest a scenario where the car catches fire and burns down your house and garage. What insurance do you claim on for the damage to your house?
Answer: None. The fire was caused by the car that has no fire insurance.
Ordinarily an insurer will provide crossover cover for a month or two when a car is changed. I would get back to your wife's insurers to clarify as an absolute cut-off as you describe is very unusual.

On the point of "IF" the car catches fire and burns my house down, i was not aware of this so im now a bit concerned as our carage is integral!
