Toyota Yaris is always worth considering.

A Fiesta with the 1.25 engine is often recommended on the forum. At this budget I think I would be tempted to look at private adverts, if you have the confidence to do that. Your budget will not buy very much at a dealer with the inflated prices at the moment.

Golf-nothing souped up-good mot history-general condition more important than specific mileage-ideally evidence of new “timing chain” or wot ever VW call them!
It’ll last you more than 5 years if you take care of basic wear &tear

what if i go upto 4k, struggling at the 3k price point.

SEAT Toledo. I've got a 63 plate with 60,000 on it and full SEAT service history. Not selling at the moment, but that's the sort of range I would expect when I do. 1.2 TSI is chain cam, enough power for motorway and hills, including towing a small trailer. The boot is enormous and rear leg room sufficient for them to be popular taxis.

My mid-range model has cruise, climate control, heated mirrors. Even the stereo and heater are pretty good.

MPG well over 40 on the motroway; 50 ish on slower open roads.

The downside is a they are not exciting to look at or drive.

For example:. A little over on miles, but demonstrates the ballpark:

I should add: Skoda Rapid is the same car. There are probably more around but they go for more, presumably as they look a little better and Skoda badge adds some value.

Go for a petrol-engined car, preferably a base or mid-trim level and I wouldn't worry about the age or mileage as such (though make sure if it's a petrol, it's an EU4 or better to avoid any ULEZ charges, which should be easy for a 2010+ petrol car [EU6 for diesel and much later]), more about condition and how good a service and MOT history it has.

That demonstrates better quality owners who takes care of the car.
