If the sensor itself had been physically removed the oil would pump out at 60 + psi and the engine bay would be covered. You would not need to check the dipstick. Having a dry dipstick if you check too soon after switching off is perfectly normal, that is why you should wait at least 5 minutes with a hot engine for the oil to sufficiently drain back.
But the belt could have damaged the sensor without removing it.
Time to get investigating.
