Why is my Ford Galaxy overheating at high speed?

My 2005 Ford Galaxy 1.9 TDI's temperature gauge sits at 90 degrees at 60mph, and once up to 65-70mph it shoots up to 130 degrees. The dash says 'Stop - check coolant'. When I slow down to under 60mph the temperature returns to 90 degrees. So far I've changed the water pump and thermostat, added new coolant and changed the expansion bottle cap. Still the fault persists.

Reads like the engine temp sensor sender switch that switches the fan on and off has failed.
