My Vauxhall Corsa cuts out when hot and then starts when cooled down - why?

I have a Vauxhall Corsa 1.4 auto Design. It cuts out when hot then, when it cools down, it starts up again. If I hold the revs at 2000rpm it will still cut out, but will start on Easystart for the duration of spray.

If I am to assume that your car has a ECU (management system) then a possibility is that the engine temperature sender unit (which is connected to the ECU) is sending it a signal telling it to close down when the temperature rises. I am not sure if you can disconnect the sender unit (so that it does not send a signal) or if you disconnect then it may not allow the engine to start. If you try disconnecting it when the engine is cold and then run the engine as long as you can to see if it cuts out, if it doesn't it could be the sender unit. Have you had the vehicle undergo a diagnostic check?
