Estate car shortage

The time is approaching to replace our 10-year-old Mondeo Estate that has been brilliant. With kids grown up, 95% of the time we only need a 2-seater but must have room in back for large dog with easy access for him to jump in. Would be happy for this to be achieved by folding back seats forward as these would only be needed 5% of time. Do low mileage and would plan to keep for another 10 years! Any thoughts?
