Engine temperature on a Volkswagen Bora

The temperature of my engine flux between 90 to 110 dregrees celsius is this normal? The water reservoir is at minimum level. I have topped the reservoir up, drove the car around and temperature still flux. Can you please tell me the problem is any?

The head gasket has probably failed. It's a huge gasket covering a large area. This problem is common.
