Should I disconnect my battery for winter storage?

I am buying an external cover for my Porsche Cayman S for storage outside over the winter months and intend disconnecting the battery over this period.
As the vehicle has central locking will I be able to lock & un-lock the car manually by simply using the key when there is no power from the battery?

Assuming your vehicle is fitted with mechanical locks you would still be able to lock and unlock the vehicle with the key when the battery is disconnected. However, a better solution may be to use a trickle charger while the vehicle is being stored. This would keep the battery in good health and ensure that the vehicle's security systems would still be active.
