How do I programme a key on my 2019 Peugeot 5008?

As far as we aware the only way to program a key on this particular Peugeot is to use a diagnostic tool, so unless you already have device like this or access to one you will need to have it programmed professionally,

A Peugeot dealer will be able to help with this, but you may find it cheaper to try an independent Peugeot specialist or vehicle locksmith.
