My dads volvo has a problem where the temperature gauge flicks from flat cold to red hot and back again quite often. It moves around really quickly.

Also - when he stops, the engine fans continue running at full speed and make a lot of noise. They continue for about 5 minutes after switching off.

Car has plenty of coolant and is not overheating, could this just be a dodgy thermostat or sensor?
