I was reading something the other day about a car with an adaptive automatic transmission and I now wonder how common are adaptive bits and pieces in the electronics so that the car does learn how you drive.
Any thoughts?

What does the transmission learn? What would other electronic bits learn?

The manual for my focus says that after disconnectig the battery the car may exhibit some unusual characteristics for aprox 8km while the engine management relearns the optimum settings. I believe a SEAT I once owned did the same.

People often used to say they could tell if someone else had been driving their car because it felt different. I can't say i've noticed that on recent cars.

When I read the subject line, I thought you meant mechanical behaviour over years of use! A friend of mine bought a Morris Minor Traveller that he swore would revert to 35mph if he lost concentration, because the previous owner never went any faster...

Yes; they pretty much all do - and have done since the '80s Escort EFi.
ECUs come with just the basics to get it running and then it constantly optimizes itself to the driver's style - only takes it 20 miles to change to a different driver.

I wonder then why Mazda 3 Auto never quite drives the way I want it to. Maybe its learnt to never quite respond how I want it to, because I'm always trying to drive it differently..which has basically become my style of driving.
