Grateful thanks to all who offered advice.
I cant help thinking thought that the cause of the original HG failure might have been down to a caput water pump as when I have run the engine it seems to have hot and cold spots in the pipework and the temp guage fails to move. Maybe it's just the thermostat? Any ideas welcome as ever!!

maybe there is an air lock in the cooling system, has it been bled?

If there is a fault with the cooling system you need to get it sorted straight away. Otherwise you will be replacing another head gasket shortly.
Did the temperature gauge fail to work before the head gasket went or is it subsequent to the work being carried out?

there's always the old 'pop the thermostat in a bucket and pour hot water over it and see if it opens' trick....

If you are going to go to the trouble of removing the thermostat then it might be worth just replacing it anyway if they are still only a few quid.
Edit: Is it not Mondeo's where the thermostat is a complete unit with its housing and you have to buy the whole lot at an extortionate cost?

According to the manual the thermostat is pretty much bog standard. I removed the housing complete to get the head off. There is a Mondy website that tells you how to test the waterpump which I will do and if in any doubt get it changed when the new belt kit is fitted. I dont know about the guage before I owned the car but feeling around the pipes and rad it seems to be no flowing very well so I have run the car for very short bursts. Have squeezed hoses to pump out air but, as I said, I'm not worried as now the car goes a little cooling problem should hopefully be relatively easy to rectify!

Got me thinking now, my Mondeo temp gauge stays towards the cold during normal driving, e.g. after a 200 mile motorway trip the gauge will still be pointing towards cold. But if sitting in slow moving traffic it will rise to the midpoint of normal. The cooling fans do correctly kick in when the gauge reaches hot.
So the gauge isn't completely faulty...
But why does the gauge register almost cold when driving normally? I thought "super efficient radiator, whenever there is good airflow (when I'm travelling fast) it really cools the coolant down" but I'm not really happy with this explanation...
Coolant has been renewed since I've owned the car -- same problem.

Possibly because the stat is not operating properly and staying fully open instead of partially closing as it should do when water is cooler..
