Very big, if the following post is anything to go by. Not to mention expensive. OK, the post is nearly 5 yrs old, but I imagine the prices will be similar, if not even more expensive than back then.

It would be more cost effective to trade the car in for a similar model with air-con fitted.
Under the bonnet you are looking at fitting the compressor, condenser, receiver/drier, condenser fan and the relevant piping. Inside the car you will have to fit the swiches, possibly another fan, control flaps and the evaporator(if this isn't fitted from under the bonnet).

Add in wiring looms, relays, sensors etc + professional checking/charging of the system and it isn't worth it.

As well as that list above, you also need to consider that many components such as radiators, heater matrices and existing pipework might have to be swapped as well. Even things like timing belt covers can be different as they might contain supports or cutouts for air-con pipework which a non air-con model wouldn't have.

A whole can of worms this one.

The latest price I've had quoted is £1800. But is it worth it anyway? I have cars with and without A/C; on about two days a year I notice the difference.
