Er, you can't do much at all "during" an engine replacement, so I guess you must mean afterwards.
You'll get plenty of advice on where to take the revs at various stages of running in, but by far the most important thing, and the most neglected, is not to bog the thing down in too high a gear and overload it. Far more damaging than being a bit free with the revs, the load on the major engine and transmission components take years of their lives.
Many a new engine has been tortured to death by drivers who were obsessed with keeping the revs down and persisted in struggling up hills in the highest gear that would still keep the wheels turning.
So many experienced drivers still make this mistake today, going up through the gears far too early doing long term reliability and immediate performance no good at all.
