Had the most dangerous driving experience of my life this morning. I was on my way to work, in lane 3 of the M60, when I rubbed my eyes, as they were itching.
20 minutes earlier I had been preparing this evenings meal, a dish involving soy sauce, rice vinegar, spring onions and red and green chillies.
I hadn't washed my hands afterwards.
Straight away my eyes closed in a burning pain, and started to water. I couldn't open them, and I was aware of the fact I was doing 70 on a very busy stretch. It took what seemed to be an eternity to forcefully hold an eyelid open and regain vision. I managed to somehow pull onto the hard shoulder. god knows how I managed it.

Probably the red chillies that did it. When I was about four, I stuck one up my nose. Unforgettable experience!

To avoid a repeat situation here's a tip given to me by a chef in India - rub oil on your hands before handling chillies, the chemicals stay in the oil rather than penetrating the skin. The oil can be washed off easily.
Another tip: Before cooking such a pungent mix light a candle in the kitchen, it will take the smell away.

Doesn't help - chillies still have an effect after washing. I speak from experience...

surely the best way to deal with chillies is to have your "sous chef" chop them for you?
Thats what I do, Mrs JaB makes a great sous chef :-D

apparently, (according to hugh thingy off river cottage) this is because the chilli molecules are adorned with little hooks, which cling to the flesh and take some shifting.
