As has been said, have a good look at MOT history, especially with such a short one. If passing the next MOT wasn't going to require a big expense, why wouldn't a seller do that?. It would make the vehicle much more attractive to a potential buyer. The fact that it is being sold with such a short MOT suggests it needs a lot of work.
As for your question on mpg, when I started cleaning windows I was running a swb high roof Iveco Daily with the 2.3 turbo diesel. My average was 29mpg.
If the Boxer you are looking at is a standard van conversion (I'd say unlikely with the 2.8 engine) it would do more, maybe 35. But my assumption is a coach body built on a chassis cab(?) in which case I'd expect similar mpg to my Iveco, maybe a little less.
But be aware that as your speed increases, the power necessary to push that big bluff body through the air increases a lot. Keep it below 60mph and the effects shouldn't be too bad.
