I have a VW Golf 1300 Ryder Mk2 1991.
With regard to fitting a new timing belt, I will probably have to remove the crankshaft pulley/sprocket.
After I have turned the engine to get the TDC marks aligned I will then have to remove the crankshaft pulley/sprocket bolt.
Will selecting a gear be enough to hold the crankshaft in place so that I can remove this crankshaft pulley/sprocket bolt?
Any suggestions will be welcome.

No, you won't have to remove the pulley; all you'll have to remove is the four allen screws holding the pulley to the crankshaft sprocket. No easy task either, as the hex heads often round off.....so be warned.
I'm sure I'm on the right track on this one guys?

tap the allen key socket onto the bolt heads then give a couple of sharp taps with heavy hammer - this "shocks" the thread and should allow you to undo the bolts, if not you may have to heat them up using a hand-held blow-torch until the heads are red hot , but you do have to remove the pulley ! as these bolts hold it on.

I assume that you mean that I do not have to remove the timing belt sprocket and that I only have to remove the outer (alternator belt) pulley.
If I cannot get a hammer to the hex bolts will applying copper grease a day before help to "anti-seize" the bolts?
Do timing belts give over time?, if not then assume I only have set the new belt tension similiar to the original belt tension?

I would use plus gas or WD40 instead of copper grease to unseize the bolts.
As for the belt tension, grab the belt in the middle of the two furthest apart pulleys. You should be able to twist the belt through 90 degrees without too much effort. Any further than 90 deg, and its too slack; less than 90 deg, and its too tight.

You need to fit the timing belt around the crankshaft sprocket, so don't take it off!
On the 1.3 engine, loosen the three bolts holding the water pump on (10mm socket), then lever with a screwdriver to obtain correct belt tension.
Use the end of the VW wheelbolt wrench (screwdriver removed!) on the end of a 6mm allem key to crack the 4 allen bolts holding the crankshaft pulley on.
