Subaru wheels should generally be swapped fronts to same side rear and rears to the opposite side front to even up tyre wear, (check your handbook), you then have all four replaced when required. I swap mine once a year as I do low miles. It is also part of the servicing schedule.
No problem having different brands (and the fact Bridgestone stopped making a tyre isn't Subaru's fault) but there should be similar tread on all four tyres so check the depth of the other two. New tyres are about 8mm, if old ones are 4mm or below I'd consider swapping all four.
To know what tyres to fit simply have a look at a new Outback and see what they are fitting now, or find an alternative. For longevity consider mud and snow tyres.
