When I remove the oil filler cap there is a noticeable vacuum trying to prevent its' removal. A vacuum is also noticeable through the dipstick tube. Can't say I've ever come across a vacuum before on other cars, only perhaps a little pressure from worn valve guides. Should there be vacuum on these engines?

Look inside your air intake pipe by the p.c.v valve (positive crank ventelation/oil catcher) is there oil in the intake pipe? Don't worry if it's just a little dribble but if it's wet with oil it could be the valve has failed and the intake is trying to suck from the rocker cover these engines do have a little vacuume from the rocker and dipstick tube anyway but not much. If you have a scanner with live data and watch the short term fuel trims when you pull the dipstick out it actually puts the short term fuel trims at a + number indicating an airleak

It has an oil catcher/separator situated on the rear of the block with a pipe leading to the inlet manifold. I can't see any other vacuum pipes (other than the brake servo). I was thinking this was possibly causing the issue.

There is a wiring connection to it, so I assume this is the p.c.v? Do you know if these can be cleaned or am I looking at a new one?

Unfortunately my cheapo scanner can't read VAG, but engine revs alter when the oil filler cap is removed and the engine almost stalls when it is replaced, presumably caused by the temporary change in mixture.

If your looking to keep the car buy a copy of vcds of amazon for about £40 you will definitely not regret it. You can do pretty much anything with it and the engine changing idle this shows a vacuum leak it nearly stalling shows it was running lean. With the regards of changing the phone. Please. P.c.v valve you would only need to change it if there's oil in the intake pipe if there isn't it hasn't failed and I can't remember what it looks like on your engine but for example the diesel pd engine you have to replace the whole rocker cover not cheap.
