Coolant light on for no reason

A warning light for the coolant temperature on my SEAT Leon mark 1 1.4 petrol often comes on when starting the engine. It will then stay on throughout the journey regardless of length but the temperature does not rise above 90°C. On a couple of occasions the temperature has dropped down to 60°C whilst driving then risen back to 90. I have checked the coolant level and all is in order. What could be the problem?

When you say the warning light is it the light for the coolant level? If so, then the problem will be the sender unit in your header tank/expansion tank, where you top up the coolant level.
