Someone damaged my car and wants to pay me cash - should I accept or go through my insurance?

If his payment covers the cost of replacing your mirror, then there is no issue. If it doesn't you may consider using your insurer, but I would do this as a last resort. You may be better using an accident management company or raising a claim via the small claims court if there was any dispute.
